Job Description

Position Summary:
Athena Restaurant is seeking an experienced and dedicated evening Sous Chef to join our culinary team. The ideal candidate will be passionate about Greek cuisine, possess a high level of culinary expertise, and have strong leadership qualities to support and manage the evening kitchen operations. The Sous Chef will work closely with the Head Chef to ensure quality, consistency, and efficiency in every dish served.

Responsibilities:

  1. Kitchen Leadership and Management:

    • Supervise and manage kitchen staff during evening hours, ensuring high performance and adherence to culinary standards.
    • Delegate tasks effectively, overseeing food preparation, cooking, and plating to maintain quality and consistency.
    • Mentor, train, and support line cooks and other kitchen staff, fostering a collaborative team environment.
  2. Culinary Execution and Quality Control:

    • Ensure that all dishes are prepared to Athena’s standards, focusing on flavor, presentation, and portion control.
    • Monitor food quality and freshness, ensuring proper storage, rotation, and utilization of ingredients.
    • Coordinate timing of orders with front-of-house staff to ensure timely service during peak hours.
  3. Inventory and Cost Control:

    • Assist in managing inventory, including monitoring stock levels, ordering supplies, and reducing food waste.
    • Work with Head Chef to maintain food cost controls by adhering to recipes, portion sizes, and inventory protocols.
    • Conduct end-of-night inventory checks and report discrepancies to Head Chef or management.
  4. Health and Safety Compliance:

    • Enforce and monitor compliance with food safety and sanitation standards as per health regulations.
    • Ensure all kitchen staff adhere to proper safety protocols, and maintain a clean and organized work environment.
    • Participate in health inspections and promptly address any compliance issues.
  5. Qualifications:

    • Minimum 3 years of experience in a culinary role, preferably in Greek or Mediterranean cuisine.
    • Proven ability to lead a kitchen team and handle high-volume dinner service.
    • Strong knowledge of food safety regulations and culinary techniques.
    • Ability to multitask, prioritize, and work efficiently under pressure.
    • Excellent communication skills and a collaborative attitude.
